I feel largely the same way. I have started to read more of other ships to make up for it. Although I’m also just much less tolerant of fics I don’t like -- I used to finish most everything I started (unless you REALLY hit a pet peeve of mine). Now if you haven’t drawn me in by chapter two, or if I feel I’ve read the story before, or if I don’t like something… I just stop reading. And what drew me to SS/HG was the creativity in the ship… but now, I’m just kind bored. (With exceptions, like you said)
But I did enter SS/HG through DM/HG, which I have largely ignored for the past three years. Now I find myself reading lots more DM/HG. My OTP, so to speak, has always been CW/HG, so I’ve been seeking that out more. And I am really enjoying non-HG rare-pairs, which I never read before.
But I also am pretty limiting because I try to mostly read only DH compliant fic. And mostly epilogue compliant fic too… which is pretty hard to find (and yet there’s so many ways to still get non-canon characters together…).
