grr again with more randomness on the side

That thing I can't talk about till July? It's now bothersome in a not-so-good way, unlike earlier when I wanted to share because I was happy about it.
Bah.
On the good side of things, thanks to
mugglegirl0908, I now will be notified if it's your birthday (and LJ knows it), which means I have much, much less excuse for actually missing them now. If I do, you have permission to whack me upside the head with a rolled up digital newspaper.
And another piece of randomness: I have a mosquito bite. Am not happy about it. It's three days old and still itches like the dickens, although at least it isn't so swollen as to make the muscles underneath hurt. Small blessings and all that. (Benadryl didn't do squat for the swelling, either. Double bah.)
But, I'm really enjoying the exchange pieces so far, even if it is making me feel vastly inferior. Yay talented authors and artists!
I suppose I should go to bed now. Hopefully I'll be able to get to sleep despite my sleep-in and nap.
Oh, but before I go, a quick review. Made the pastitso, cold lentil salad and cauliflower vinaigrette. Lentils needed something, but haven't figured out what yet. Cauliflower would have been excellent if they'd been thoroughly chilled (like the recipe calls for), and the pastisto was excedllent made with 1/2 recipe of the cream sauce, but would have been better with more pasta to balance the fatty factor, or served with potatoes. Taste was wonderful, though. I think I added double the cinnamon, and definitely added double the tomato paste.
Also, the zucchini fritters are lovely when hot, although they also need more of something... garlic, I think, as they were fabulous with the leftover garlic potato sauce from the beet salad (which is very garlicky, btw). Would have been fine with real tzatziki rather than that wimpy sauce the recipe called for. But more garlic in the fritters would counter the wimpiness of the sauce.
Oh, and the beet salad w/ garlic sauce (more of a paste, really) was everything I rememered it to be. Yum.
Won't review on the rice with leek and silverbeet, as I made it without the leek. Wasn't bad, but not great either, and I suspect the leek would help matters.
And, if I haven't mentioned it before (memory like a sieve, I have!), the curried chicken couscous made with quinoa was quite good, though needs perfecting.
Next Greek feast I think I'll make the chicken and lemon soup and creamy chicken pie and possibly the dolmas to go with. But that might not be for a bit. Mexican food season is starting to heat up, and I have the pina colada mix (and rum) or tequila (and really, do I need the margarita mix?) to go with it.
Any favorite Mexican, TexMex or New Mexican dishes you care to share? I already know I need to try the Spoonbread thing that is one of my mum's favorites, but side dishes besides rice and beans are always appreciated. And if you have a good tamale recipe, PLEASE do share. I do so love good tamales. Not so much chili rellenos, though. Too much cheese. Ick.
Damn, now I'm hungry again. =) Off I go to snag a snack.

Also a very weird chipotle-spinach quesidilla that I eat when the weather gets really hot and one can't use the stove. (It's briefly melted on the stove.) Oh yes, and my gazpacho (not exactly Tex/Mex) rocks, but is best once you have fresh tomatoes.

(It's cool enough today that I'm baking a pie and bread. This after an 80 degree, 80% humidity day Saturday. Go figure.) Geoff doesn't care for gazpacho (not liking either tomatoes or avacados), but I LOVE the stuff.
