Good Things Friday

Because I have done nothing but whine for the last week (or more).
1. Roasts. I roasted a chicken at the beginning of the week because it didn't involve chopping the bird up, which was too much work for me in my sickly state. And, boy, was that chicken good! (Stuffed with 1/4 onion, five cloves garlic and a quartered lemon.) I roasted some acorn squash to go with it, (in pan with water at 350. First thirty minutes upright to let the butter or coconut oil melt, then flip them over and over bake by an hour or two), and I have been enjoying that as well! And last night I roasted a boneless pork roast that needed cooking, slathering mustard on it and cooking it the same as the chicken, only at 325. Should have done 350, as it was too slow cooking, so I finished it off with 5-10 minutes on 425 (speed bake).
O. M. G. The meat itself was wonderful, but the "skin"! I have never enjoyed fat, but that was fucking fabulous! The mirepoix was also quite nice.
2. Magnesium with side helping of chiropractic care. Or vice versa.
3. Sleep. I'm still not sleeping through the night without waking up, but I am sleeping better. It makes such a world of difference.
4. Cuddles.
5. This odd little elm(?) leaf I found on the ground this last fall. It caught my eye because it looked like it had copper veins, and it still does. It's retained it's colors remarkably well, and since rescuing it from Babe's wanton destruction and placing it on my desk, it's been giving me pleasure every day.
6. Mubarak resigned. And considering how low the level of violence on the revolter's side was in this revolution, it seems possible, possibly even probable, that a more just government will take his place.
